For best results, follow this defrosting instructions:
Leave overnight in the refrigerator to slowly defrost. Do not rush this process by microwave or by putting in water as the steak will lose its juices. Next day, leave the steak out for an hour to reach room temperature, then cook.
Salt and pepper to taste with a thin layer of cooking oil around the steak. Pan fry only to sear the meat quickly until brown all over. Heat oven to 325 F and place in oven for 20 minutes after for medium rare.
