A creamy, unpasteurized cow’s milk cheese. It is soft, smooth & elastic with a mild creamy flavor when young, goes harder and sharper when aged. Aging takes 60 days to one year. It has the characteristic “eyes” but doesn’t spread throughout the cheese. It reveals a harmonious, mild, fruity and nutty flavor heightened by the pleasant aroma.
